CHINOOK (King) The largest of the salmon, prized for its size, (15 to 50
lbs.) firm flesh and rich flavor. Chinook is also highest in Omega-3
oils. Summer Kings run May through July; winter Kings run December
through April.

SOCKEYE (Red) Known for its vibrant red flesh and delicate flavor, Sockeye is
considered by many to be the finest salmon It is also highly prized
as a premium sushi fish. Sized at 6 to 10 lbs. Available June through
mid-August.

COHO (Silver) This frisky salmon weighs in at 8 to 20 lbs. with a firm
orange to pink flesh and excellent all-around flavor. Coho run from
August through mid-October.
